Start by looking at the open stalls and their menus. If several things tempt you, choose a first tasting then continue the walk before deciding what comes next.
You can also share some purchases when the portions and everyone's needs lend themselves to it. That way you can taste more flavours without ordering a full meal at every stop.

With children, spot early a suggestion that suits them. For an allergy or a dietary restriction, speak directly with the vendor: the name of a product is not enough to know its ingredients or how it was prepared.
For drinks, also check what is offered without alcohol. A hot cup can accompany the outing, but also bring something to drink according to the group's needs.
Set a budget for the tastings before leaving. Small successive purchases are easy to forget when you later add up the cost of the whole evening.
Look at whether the crockery or the container carries a deposit and ask how to get it back. Do not assume the payment methods are the same at every stall.
If you want a long walk, a break at a village may be enough before another meal. If you prefer to dine at a restaurant, book and let the stalls play the role of a complementary discovery.
